How would I set up my permissions for my forum, so I could do something like this forum - where there is a "customers only" forum, and the other forums are open to registered users....

What is the difference (in permissions) between a customer, and a registered forum user?

You need to create a new member-group for your elevated members, move the members into this new group and then setup the restricted forum to only allow the new elevated member group. This is simplified obviously. The documentation that comes with the forum should explain the rest.
